The other night, I made dinner and dessert completely from scratch. Nothing was premade, not even the pie crust. I made a Quiche for the first time the other night. And, I had have quiche before, but I never realized how easy it was to make, and how affordable it was! You don’t need a bunch of specific veggies, I personally used what I had for it. Which just so happened to be bacon, spinach and cheese. I made the pie crust the day before in my food processor, so when I was ready to make the quiche, all I needed to do was bring the crust to room temperature, roll it out, cook the bacon and mix up the eggs and throw it all together! And yes, it really is THAT easy!
- 1 Pie shell (I made mine but premade will work)
- 5-6 eggs
- ½ cup milk
While I waited for the bacon to cook, I rolled out the pie crust. You can choose to either use the whole lb, or just 5-6 strips, cut up. I personally used the whole lb, just because well… I know my husband all too well. If it didn’t have lots of bacon he would have questioned it.
Anyways, Once you mix the eggs and milk together, season with some salt and pepper, and put in the chopped spinach and then put in the pie shell, and top with bacon and cheese. Put in a 425 preheated oven for 15 minutes, and then turn your oven down to 350 until the crust is golden brown and eggs are set. Cut, serve, and enjoy.
Now. My husband mentioned how delicious it would be with some salsa, or if I added tomatoes to the mixture. Which I would have if I had them, but I didn’t at the time. And being that this has eggs in it, this is a great breakfast, lunch, or dinner recipe, and its healthy, and while there are carbs in it from the crust, its not overloaded with carbs either, and you get your veggies, and protein from the eggs and bacon (if you so choose to put bacon in yours)
My family really enjoyed it, and I only had one piece leftover! Which my daughter had for breakfast the next day! I will deffinatley make it again in the future. And many people may think “Well ,that sounds like it uses quite a bit of eggs” and for some, it does. But I tend to get the big flats of eggs from the grocery store, as we tend to use eggs a lot. Weather it be scrambled, boiled, or baked, we just use a lot of eggs.
Anyways. Try this at home, its easy, delicious and you can easily change it up to fit you and your families desires!
