Recently, a friend of mine and my moms got me a gift. Totally unexpectedly, and I was pleasantly surprised when my mom texted me a photograph of it. A food processor, and whats more, not a plastic piece of crap like I used to have and then lost! A Cuisinart at that! I picked it up as soon as I could, and when lifting it, I couldn’t believe how heavy it was! When I got my old black and Decker food processor, it was light, and loud and I hated using it just because it was so loud. But with this thing, oh boy, if I can use it every day, I can very well see myself doing so! So when I brought it home, I got everything out of the box and set it all up, only having minor difficulty when it came to putting on the shredding attachment. Now I just needed something to make! Groceries were running low, so I was kinda limited in what I could make.
I looked around at different recipes, and for most of them, I didnt have all the ingredients. But then I came to peanut butter balls. It looked like these would be good, and I had most of the ingredients other than the sea salt and chocolate drizzle. This would be something simple I could take to work to snack on easily, and peanut butter, which has a little protein and the good fats in it. The ingredients were reasonably simple as well.
- 2 Cups of Oats
- 1 Cup Peanut Butter
- ½ cup Honey
- 1 Tsp Vanilla extract
- Chocolate drizzle
- Sea Salt
First, you put the oats in the food processor, and whirl around until it turns into oat flour. After that, put in the peanut butter, honey and vanilla and mix until it turns into a dough. After that, I use my Mellon baller to scoop the same size balls that I roll around in my palms, and put on a cookie sheet laid out with wax paper on it. Once I have used all the dough, I put them in the freezer to set and solidify.
I had been trying to think of snacks that would be easy to take to work with me, that don’t require a lot of extra ingredients that I normally don’t purchase. With this, I normally always have the ingredients on hand and its easy to make! It took me less than 20 minutes total easily. And they taste great! I’ll admit, it would be better if they had chocolate in them, just for a little something other than peanut butter but all in all, still, not bad at all, and a great on the go snack food to make.
